Roasted Red Pepper Pasta
Easy pasta recipe we have tried and enjoyed a few times!

Ingredients
- 2 red bell peppers
- 1 red onion
- 2 cloves of garlic
- 1/2 cup cashews
- 1 cup oat milk
- 2 tbs nutritional yeast
- 1/2 tsp smoked paprika powder
- to taste salt, black pepper, and red pepper flakes
- 1 box pasta
- fresh parsley to serve
Instructions

Preheat oven to 350 and line a baking sheet with parchment paper. Roast cut bell peppers, onion, and garlic for 10 minutes.

Cook pasta according to package instructions.

Place roasted bell pepper, onion, and garlic out of the oven. Blend until smooth with remaining ingredients.

Heat up sauce in a saucepan for a few minute. Stir in cooked pasta and serve.
