Banana Bread
I once ate a whole half of a loaf of this bread in one go after a long hike.

Ingredients
- 2 tbs ground flaxseed
- 5 tbs water
- 2 large ripe bananas (about 1 cup mashed)
- 1⁄3 cup melted vegan butter, a neutral oil, or apple sauce
- ⅔ cup white or brown sugar
- ¼ cup nondairy milk
- 2 cups flour
- 1 tsp baking soda
- ½ tsp salt
- ¼ tsp ground nutmeg or cinnamon (optional)
Instructions

Preheat oven to 350 °F and grease a loaf pan (9 x 5 inches)

In a small bowl, combine the ground flaxseed (2 tbs) and warm water (5 tbs), set aside to thicken.

In a large bowl, mash the bananas (2) until smooth. Stir in the melted butter or oil (1⁄3 cup).

Add the sugar (⅔ cup), nondairy milk (¼ cup), and flax egg mixture. Stir to combine.

Add the flour (2 cups), baking soda (1 tsp), salt (½ tsp), and optional nutmeg or cinnamon (¼ tsp). Stir until just combined, don't over mix.

Pour into the greased pan and bake in the center rack for 50-60 minutes. Let cool for at least 30 minutes.
