Banana Bread

I once ate a whole half of a loaf of this bread in one go after a long hike.

  1. Preheat oven to 350 °F and grease a loaf pan (9 x 5 inches)

  2. In a small bowl, combine the ground flaxseed (2 tbs) and warm water (5 tbs), set aside to thicken.

  3. In a large bowl, mash the bananas (2) until smooth. Stir in the melted butter or oil (1⁄3 cup).

  4. Add the sugar (⅔ cup), nondairy milk (¼ cup), and flax egg mixture. Stir to combine.

  5. Add the flour (2 cups), baking soda (1 tsp), salt (½ tsp), and optional nutmeg or cinnamon (¼ tsp). Stir until just combined, don't over mix.

  6. Pour into the greased pan and bake in the center rack for 50-60 minutes. Let cool for at least 30 minutes.
