Spiced Oatmeal Cranberry Cookies
These cookies were very popular at Thanksgiving 2021. A really good fall dessert. Makes 18 cookies.

Ingredients
- 3/4 cup vegan butter/margarine
- 1/3 cup granulated sugar
- 3/4 cup packed brown sugar
- 1 tsp vanilla extract
- 1/2 cup oat milk
- 1 cup AP flour
- 1/2 tsp baking soda
- 1/2 tsp ground cinnamon
- 1/4 tsp ground ginger
- 1/4 tsp ground cloves
- 1/4 tsp ground nutmeg
- 3 cups quick or rolled oats
- 1 cup dried cranberries
Instructions

Preheat oven to 350. Cookie sheet can go ungreased.

Cream together vegan butter/margarine (3/4 cup), white sugar (1/3 cup), and brown sugar (3/4 cup packed) until smooth and light.

Add vanilla (1 tsp) and non-dairy milk (1/2 cup) and mix until combined.

Add flour (1 cup), baking soda (1/2 tsp), cinnamon (1/2 tsp), ginger (1/4 tsp), cloves (1/4 tsp), and nutmeg (1/4 tsp) and stir until well mixed.

Stir in oats (3 cups) and cranberries (1 cup).

Spoon dough until 1 1/2 inch balls and bake 10 to 15 minutes or until done.
